I joke that my only real addiction in this incarnation is espresso. But if one were to examine my life a little closer another addiction would become apparent… one perhaps a little less likely. That other addiction is… drumroll please… Gingersnaps.
My favorite gingersnaps are from Trader Joe’s: they’re the Triple Ginger Snaps and my mouth waters just thinking about them. I could eat the entire container in one sitting without thinking about it. Growing up my mother bred my sister and I on an unprocessed diet featuring whole foods, low sugar, and virtually no junk food. As an adult I mirror that lifestyle so I got to thinking maybe I could feed my gingersnap addiction and not have to ingest all the processed sugar and white flour. I’ve done a lot of “raw baking” in the past few years and I did a little more raw research and came up with what turned out to be, in my humble gingersnap-addicted opinion, excellent raw gingersnaps with all natural ingredients. And the best part was I got my sister Marlie to make them with me and we made them into gingerbread men and women! I love doing things with my sister. Growing up we did everything together but now we live on opposite coasts so I rarely get to do things like make cookies so this was very special.
My sister is a master at calligraphy and penned this beautiful recipe out for me after we finished!
I made the entire batch in a food processor. I slowly added the ingredients and melted down the coconut oil to a liquid to make it process easier. When the ingredients were broken down into a dough like substance, I hand whisked the dough to the texture I wanted then kneaded the dough by hand.
I then let the dough sit in the freezer for 30 minutes to solidify. I took it out and we rolled it with a rolling pin.
Once the dough was rolled out we took cookie cutters to it!
